Lecithin is a fatty substance by nature. In terms of chemistry, Lecithin's active components phosphatides are composed of glycerophosphoric acid, fatty acids and cholin. Lecithin is the building element of cell walls and membranes of all cells in the human body. Its presence supports basic cell functions. It is very important for tissues with intensive metabolism, like the brain, heart, liver and kidneys. For these reasons, lecithin is sometimes called “food for the brain”. Lecithin plays an important role in the process of fatty substance dispersion, as it ensures their “solubility” in water. Lecithin provides not only for better resorption of healthy fats in the intestines, in addition to enhancing the excretion of fats by means of cholesterol activity, thereby reducing the risk of atherosclerosis. Lecithin should be included in the diet of all people and especially the elderly.
